2 Tbsp. butter, softened
1/8 tsp. instant minced garlic
3 English muffins, split and toasted
24 slices pepperoni, each about 1 1/2 inches in diameter
12 cherry tomatoes, cut into halves
1 C mozzarella cheese (4 oz.)
1/2 tsp. dried oregano leaves
Mix butter and garlic; spread on muffin halves.
Cut each muffin half into 4 wedges; do not separate.
Place 1 slice pepperoni and 1 tomato half on each muffin wedge.
Place in broiler pan. Mix cheese and oregano;
sprinkle over muffin wedges. Set oven control to broil.
Broil muffin wedges with tops about 5" from heat
until cheese is melted, about 2 minutes.
Cut into separate wedges.
