Ice cream sandwich dessert

This is a quick ice cream dessert I found the other night on allrecipes.com. I made it for our Valentine's meal. It was delicious and tasted as though I had spent a lot of time making it. It taste as great as it looks.








INGREDIENTS

  • 1 (16 ounce) can chocolate syrup
  • 3/4 cup peanut butter
  • 19 ice cream sandwiches
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 cup chopped pecans


DIRECTIONS

  1. Pour the chocolate syrup into a medium microwave safe bowl and microwave 2 minutes on high. Do not allow to boil. Stir peanut butter into hot chocolate until smooth. Allow to cool to room temperature.
  2. Line the bottom of a 9x13 inch dish with a layer of ice cream sandwiches. Spread half the whipped topping over the sandwiches. Spoon half the chocolate mixture over that. Top with half the pecans. Repeat layers. Freeze until firm, 1 hour. Cut into squares to serve.
Since there is just the two of us. I cut the recipe down to using only 12 ice cream sandwiches and using a 8x8 pan. I cut some of the sandwiches to fit into the pan. Used smaller portions of the remaining ingredients.

I'm definitely making this one! Looks so yummy, but since it's so darned cold here (negative 3 this am!), I may wait until summer. Well, maybe spring. ;)
