This is Mom K's no frosting carrot cake. Tim has experimented to reduce the amount of oil in the cake but each time he does, the cake loses it's moistness. So he decided just to keep it as is.
Ingredients
1 1/2 C oil
2 C sugar (1 dark brown, 1 white)
3 C flour
4 eggs
2 tsp cinnamon
2 tsp allspice
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 C Milk
2 C grated carrots (about 8 large)
1 C nuts (optional)
Mix wet with dry. Bake in form pan for around 1 hour at 350 degrees.
