Basil Pesto

Recipe copied from Wheatbelly 30 minute cookbook

Basil Pesto - makes 2/3 cups

1 cup packed fresh basil
2 T pine nuts
2 cloves garlic chopped
1/3 cup extra virgin olive oil
1/4 cup grated Parmesan cheese
1/4 sea salt
1 1/2 t. White balsamic vinegar

In food processor combine basil, pine nuts, and garlic. Process into a paste. Add the oil, cheese, salt and vinegar. Process until the ingredients are belonged and the pesto is bright green.
