Garbanzo bean sandwich filling

This recipe will start my first vegetarian meal. I found this on allrecipes. You can serve it on multi grain bread with lettuce and a slice of tomato. This is a great recipe to modify and use other raw vegetables in place of the celery. I added a dash of Frank's Hot sauce to make it a little more spicier




INGREDIENTS

  • 1 (19 ounce) can garbanzo beans, drained and rinsed
  • 1 stalk celery, chopped
  • 1/2 onion, chopped
  • 1 tablespoon mayonnaise ( I used Smart Balance Omega Plus )
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill weed
  • salt and pepper to taste

DIRECTIONS

  1. Drain and rinse chickpeas. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in celery, onion, mayonnaise (to taste), lemon juice, dill, salt and pepper to taste.
