Turkey Focaccia Sandwich with Basil Salsa


Serving: 8 Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 60 minutes


2 seeded and diced plum tomato
1 peeled, seeded and diced cucumber
1/2 chopped cup fresh basil
1 chopped tbsp green onion
1 tbsp olive oil
1 minced tsp garlic
1/4 tsp pepper
1 tbsp lemon juice
grated or chopped very finely lemon peel
2 8.9 oz package Focaccia bread
2 to 3 leaves of lettuce
3/4 shaved lb smoked turkey breast
1/4 shaved lb Provolone cheese




To make the salsa: In medium bowl, combine tomato, cucumber, green onion, basil, lemon peel, lemon juice, oil, garlic and pepper. Cover and allow to stand at room temperature for 1 hour. Slice each piece of focaccia in half, top to bottom. On each, arrange lettuce on bottom half, then add the turkey and cheese slices, and finally top with the salsa, dividing equally among sandwiches. Cover with top half of focaccia, and slice into wedges to serve.
