Sugar Free Margarita

I love margaritas but hate the high sugar content. I found this substitute on the internet. Using fresh lime juice is essential in this great tasting recipe.

Ingredients:

1 jigger (1.5 oz) tequila
2 Tablespoons (1 oz) lime juice - bottled more convenient, fresh tastes a lot better
1/4 cup (4 Tablespoons) water
1/4 teaspoon orange extract
1 Tablespoon's worth artificial sweetener (I like to use liquid, carb-free types)
Ice - small handful
Margarita salt or kosher salt

Preparation:

Wet the rim of the glass and dip into a small plate of salt.

Combine all ingredients. You can either serve it over ice or strained into the glass, or blended in a blender.

Festive red punch

I needed a red punch for a baby shower that I was hosting. Checked out a number of recipe books and online sites and came up with this fruity concoction that is first frozen into a slush and then placed into a punch bowl with ginger ale. The recipe turned out to be a great hit. We went through both punch bowls. Great punch for the holidays or formal gathering.








Ingredients:
1 C white sugar
6 C water
2 (3 oz) pkg strawberry jello
1 (46 ounce) can pineapple juice
2/3 C fresh lemon juice
1 quart orange juice
2 (2 liter) bottles of lemon-lime carbonated beverage or ginger ale.

1. In a large saucepan, combine sugar, water and strawberry flavored gelatin. Boil for 3 minutes. Stir in pineapple juice, lemon juice, and orange juice. Divide mixture in half and freeze in 2 separate containers.

2. When ready to serve, place the frozen contents of one container in a punch bowl and stir in 1 bottle of lemon lime soda or ginger ale until slushy.

Bailey's Irish Cream - Copycat



A family favorite during the holidays




1 c Light cream
1 14-oz can sweetened condensed milk
1 2/3 c Irish Whiskey
1 ts Instant coffee
2 tb Hershey's chocolate syrup
1 ts Vanilla
1 ts Almond extract

Combine all the ingredients in a blender set on high speed for 30 seconds. Bottle in a tightly sealed container and refrigerate. The liqueur will keep for at least 2 months if kept cool. Be sure to shake the bottle well before serving.
Makes 4 cups.

Swiss Miss

Swiss Miss Hot Chocolate


1 16 oz. box of non fat dry milk
1 C. Sugar
3/4 C. cocoa


Sift all ingredients together three times. Store this mixture in a
tightly sealed container in a cool place. When ready to use,
you can add a couple of heaping tablespoons to hot water.

Sprinkle miniature marshmallows on top.
