Seasoned Rice

In a number of my vegetarian recipes I've been seeing , "nutritional yeast". I had to do a google search to find exactly what that was. Nutritional yeast is a nutritional supplement popular with vegans and the health conscious, who use it as an ingredient in recipes or simply as a condiment . It has a strong flavor that is described as nutty, cheesy, or creamy, which makes it popular as an ingredient in cheese substitutes. It is often used by vegans in place of parmesan cheese. Another popular use is as a topping for popcorn . It a natural B12 supplement. It can be found in health food stores or in large grocery stores. I found nutritional yeast in the bulk aisle at Pick-n-save.

Last night I tried this rice dish with grilled salmon. I was really surprised on how good it was. Add whatever vegetables you have on hand. For this recipe I used red sweet peppers along with mushrooms. Add more or less for your taste.

INGREDIENTS

  • 1 cup Basmati rice
  • 3 2/3 cups water, divided
  • 2 tablespoons margarine
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons dried basil
  • 1/2 c chopped red sweet pepper
  • 1/2 c chopped mushrooms
  • salt to taste

DIRECTIONS

  1. In a saucepan bring 3 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is cooked and all liquid is absorbed.
  2. Melt margarine in a large saucepan over medium heat. Stir in remaining 2/3 cup water, nutritional yeast, garlic powder, basil and salt; heat for 5 minutes. Stir in cooked rice and cook until heated through, about 2 minute
