
Ingredients:
1 pound fresh rhubarb cut into 1 inch pieces (4 cups)
1 cup sugar
1/4 cup flour
1 t. cinnamon
Topping:
1 cup flour
1 cup brown sugar
1/2 cup oatmeal
1/2 butter, melted but not hot
Preheat oven to 375 degrees. In a large bowl combine rhubarb with sugar, 1/4 cup flour and 1 teaspoon of cinnamon. Transfer into 4 individual baking dishes or one larger baking dish.
In another bowl combine flour,brown sugar, oatmeal, and butter. Mix well and sprinkle over rhubarb. Bake for 35 minutes, until topping is golden brown and rhubarb is tender. Serve with vanilla ice cream. Makes 4 servings.
